Founded by Chef Sandra Batiste, Bayou Scratch Kitchen is a celebration of Cajun and Creole cuisine—deeply rooted in Louisiana tradition and elevated with a San Francisco influence. But this story starts long before the brand.
It starts with her grandfather, Henry Gray—a proud Cajun and Creole cook whose life was dedicated to the craft of Southern cuisine.
Working on Bourbon Street in New Orleans, and aboard the riverboats that traveled the Mississippi, Henry Gray didn’t just cook food—he carried culture. His dishes reflected the richness of Cajun depth and Creole refinement, blending bold seasoning with soulful technique.
There were no measurements. No shortcuts.
Just instinct, experience, and an unwavering commitment to doing it right.
